Upcycling is an important benefit for our environment; it reduces food waste and greenhouse gases, while also reducing our need to grow and transport new ingredients. Food production uses a lot of water and produces harmful pollutants that can be reduced by upcycling ingredients we already have.

Leftovers prevents food loss and waste by diverting unsold, fresh food from the landfill and into the hands of those needing it most, or creatively repurposing it with community partners.
